Bruschetta Chicken Pita Pizza

This Bruschetta Chicken Pita Pizza is a flavor-packed, quick-fix dinner that feels fresh and fancy—without the fuss. Ready in under 20 minutes, it's crispy, cheesy, and loaded with bold bruschetta flavor!

Ingredients

  • 4 Trader Joe’s Garlic Pita Breads (or your favorite pita bread)
  • ½ cup tomato sauce (or marinara)
  • ½ cup shredded mozzarella cheese
  • 10 oz cooked chicken, diced
  • ⅓ cup diced Roma tomatoes
  • ⅓ cup diced cucumbers
  • 1½ Tbsp basil pesto
  • ½ tsp minced garlic (or 1 garlic clove)
  • 1 tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 Tbsp balsamic glaze

Instructions

  1. Preheat your oven to 375°F.
  2. 2. Dice up the fresh stuff. Chop tomatoes, cucumbers, and your cooked chicken.
  3. 3. Make your seasoned sauce. In a small bowl, mix the tomato sauce with garlic powder, cumin, salt, and pepper.
  4. 4. Assemble the pita pizzas. Spoon about 2 Tbsp of sauce onto each pita bread. Sprinkle with 2 Tbsp of mozzarella cheese, then top with about 2 oz of diced chicken.
  5. 5. Mix up the bruschetta-style topping. In a separate bowl, combine the chopped cucumbers, pesto, minced garlic, and a little salt + pepper to taste. **Optional: If you like your tomatoes cooked, you can stir them into this mixture. Otherwise, keep them fresh to add after baking.
  6. 6. Bake! Evenly spoon the cucumber mixture over each pita, then bake all 4 on a sheet pan for 10 minutes, or until the cheese is melted and the edges are lightly crisped.
  7. 7. Add the toppings. After baking, top each pita with about 2 Tbsp of diced tomatoes (if you didn’t cook them) and drizzle with ½ Tbsp of balsamic glaze.
  8. 8. Slice & serve. Cut each pita pizza into fourths and serve while warm!

Notes

  • Shortcut idea: Use rotisserie chicken to save even more time.
  • Make it meatless: Skip the chicken and add a little extra pesto + more veggies!
  • No balsamic glaze? A tiny splash of balsamic vinegar will do in a pinch.
